The new cookbook, Panda, has been written by Peking University professor Mei-Shan Zhang, who will serve as an executive director.
Zhang is a culinary advisor for the New York-based nonprofit ChinaAid, which promotes environmental sustainability and education.
Zhang’s first book, Cooking With Panda, was published in 2018.
Zhang has a reputation for being both a chef and a philanthropist.
Zhang, whose mother was Chinese, came to the United States in 2015 after graduating from Cornell University.
The family has lived in New York City since the 1970s.
“I am honored to have been chosen as the first Chinese-American chef to serve at the New Peking,” Zhang said in a statement.
Zhang will serve at PETA’s new International Peking Fair in 2018 and at the Peking Philharmonic Festival in 2020.
“My role with PETA is to advocate for animals, and I believe that the work of our PETA partners has been an incredible success.
We are excited to work with this talented group of talented chefs to bring Panda to the PETA audience,” Zhang added.
Zhang served as the executive director of ChinaAid from 2016 to 2018.

We look forward to continuing to work together,” PETA president and CEO Jodi Kantor said in an emailed statement.
